In the cocktail industry, ice is a crucial element that not only serves to chill drinks. With the passage of time, the quality and shape of the ice have contributed to a much more attractive and appetizing presentation of cocktails.
In ITV we talk about the types of ice used for cocktails and what distinguishes each one.
Ice in Cubes
This is the most common and the most used in the cocktail industry. Within the ice cubes we find different variants, such as American ice, a cube larger than usual, square-shaped, which occupies the bulk of the glass.
Among the cubed ice, one of the most advisable for cocktails is crystal ice, especially valued for its purity and its attractive shape. We highlight the ability of this ice to keep the taste of the cocktails intact. It is undoubtedly our favorite choice when making aesthetically very attractive cocktails, which also enhances the flavor of the drink without watering it down.
A good example of a cocktail that uses this type of ice is the classic Martini. Composed of gin and vermouth, this refined cocktail is served with crystalline ice to keep the drink fresh, diluted without losing the flavor of its ingredients, and always with an “elegant” appearance.

Frappé Ice
This type of ice is similar to crushed ice and is mainly used for slushy cocktails. This variant of ice offers us an advantage and a disadvantage: its capacity to cool is very fast, so we can have a cocktail ready almost in seconds. The downside is that since it is made up of such small ice fragments, they dissolve quickly and end up watering down the cocktail if it is not consumed quickly.
Spherical Ice
In functionality, this type of ice is very similar to ice cubes, with the exception of the shape. Spherical ice began to gain popularity in Japan because of its distinct shape, and like its cubic counterpart, it tends to last quite a long time before falling apart. This type of ice soon fills the glass, so we have to keep this in mind when calculating the quantities with which we will prepare the cocktail.
Dry Ice
It is also known as carbonic snow and is actually carbon dioxide in a solid state. This type of ice produces a kind of vapor or mist that is very popular in the presentation of certain cocktails. However, we must keep in mind that it can get very cold, which is a disadvantage when presenting a drink at the exact moment to be consumed.
