The quantity of wines that the current market offers is huge: strong ones, softer ones, white ones, red ones\u2026Even though, there is a\u00a0type of wine that is no so known and demanded, but it has its\u00a0own\u00a0target, indeed. We are talking about ice wine.\u00a0\u00a0<\/span><\/p>\n

It can sound strange or weird to hear that combination.\u00a0Mixing wine with ice?\u00a0\u00a0<\/span><\/p>\n

Like this, you get watered wine, right? It is true, but we are not talking about\u00a0mixing wine with ice, but about producing it with ice.\u00a0\u00a0<\/span><\/p>\n

Ice wine can\u2019t be\u00a0understood as\u00a0a kind of\u00a0dessert;\u00a0otherwise, it can be\u00a0seen as a type of wine. This kind of wine has its origins\u00a0in Germany, discovered\u00a0almost by chance in\u00a0XVIII\u00a0century,\u00a0which contains high sugar content.\u00a0\u00a0<\/span><\/p>\n

History of ice wine\u00a0<\/span><\/h2>\n

In\u00a0Germany, around the end of that mentioned century, cold season brought forward, which meant that farmers couldn\u2019t allow the grape to ripen. This froze, and the farmers, before\u00a0throwing away the harvest, they decided to harvest the frozen crop, without getting the right level of ripening.\u00a0\u00a0Once,\u00a0it was done, workers were very surprised with the result obtain\u00a0after pressing the grapes,\u00a0discovering\u00a0a totally new taste: sweet, tasty and aromatic.\u00a0\u00a0<\/span><\/p>\n

Once that elaboration was known around the world,\u00a0others decided to try producing it.\u00a0 The first one elaborating this kind of wine was the French kingdom, which\u00a0did considerate\u00a0it\u00a0unique, and decided to elaborate\u00a0little quantity of it, and reserve it for special occasions.\u00a0\u00a0<\/span><\/p>\n

Further on, other countries in the north of Europe, as Austria, Croatia and Switzerland, decided to copy the process and elaborate wine in huge quantities.\u00a0\u00a0<\/span><\/p>\n

The risk of losing the harvest is important<\/h2>\n

Elaborating ice wine is a risky\u00a0option, because it depends exclusively on weather conditions.\u00a0 During the last months of the year, humidity and precipitations\u00a0increase, so the risk that the harvest gets affected by a type of fungus is high.\u00a0\u00a0<\/span><\/p>\n

Usually, harvest season takes place during the last days of September or the beginning\u00a0of October, but if what you want is obtaining ice-wine\u2019s specific taste, it is probable that farmers delay their work.\u00a0<\/span><\/p>\n

Conditions for wine to be considered\u00a0ice wine\u00a0<\/span><\/h2>\n

Not every single wine\u00a0can be considered ice wine. For that, a wine has to meet some specific conditions:\u00a0\u00a0<\/span><\/p>\n

  • Grapes must be frozen in the stock.\u00a0\u00a0<\/span><\/li>\n
  • In the moment of pressing the grapes,\u00a0or harvesting, those processes require cold temperatures, which can\u2019t exceed 8 centigrade degrees.\u00a0\u00a0<\/span><\/li>\n
  • \u00a0Artificial freezing of grapes is forbidden.<\/li>\n
  • In the\u00a0pressing moment, one\u00a0part\u00a0of the must should solidify, getting then, huge quantities of sugar and compounds.<\/li>\n<\/ul>\n

    At a national level, elaborating this wine is not an easy\u00a0task, because it is necessary certain specific weather conditions. Due to that, it is only possible to produce it in specific regions as\u00a0Castilla\u00a0and\u00a0Le\u00f3n, Catalonia, Arag\u00f3n and\u00a0La Rioja.\u00a0\u00a0<\/span><\/p>\n

    At an\u00a0international\u00a0level,\u00a0Germany and\u00a0Canada\u00a0lead the\u00a0elaboration\u00a0of ice wine. Canada, thanks to its extreme temperatures and its current weather conditions, and, Germany, due to its climate and history.\u00a0\u00a0<\/span><\/p>\n
